马铃薯蒸熟后压成泥搓团,爆香蒜蓉、姜蓉及虾米,搭配辣豆瓣酱及红辣椒末炒香,香香辣辣很惹味。

    Step 1

    马铃薯片蒸软至熟,取出放入大碗中趁热压成泥。加入其余材料A拌匀,揉成软硬适中的面团。Steam the potato chips until soft and cooked, put them in a large bowl and press them into puree while hot. Add the remaining ingredients A, mix well and knead into a dough.

    Step 2

    手中抹上少许油,防止沾黏,再把面团分成几份,搓成蛋黄大小的球状,放入蒸盘,冷水上锅以大火蒸约10分钟,取出待凉备用。Spread a little oil on your hands to prevent sticking, then divide the dough into several portions, knead into the egg yolks size and put in a steaming pan to steam in a high heat for about 10 minutes. Take out and let cool for later use.

    Step 3

    锅中下少许油爆香蒜蓉、姜蓉及虾米,跟着加入辣豆瓣酱及红辣椒末炒香。Put a little oil in the pot and sauté the garlic, ginger and dried shrimps, then add the chilli bean sauce and chopped red chili stir fry until fragrant.

    Step 4

    加入肉碎炒至转色,倒入调味料及少许水煮滚并勾芡,即可盛起浇入薯球上,最后以青葱粒点缀即可。Add the minced meat and fry until the color turns, pour in seasonings and some water boil to thicken, then pour it on the potato balls, at last garnish with some chopped green onion.
